Easy barbecue chicken pizza

The first time I ever made barbecue chicken pizza I ordered it from a popular pizza chain.  After trying theirs, I thought, “I can do better than this!” and according to my family and friends I did! 

With this easy BBQ chicken pizza recipe you can get the whole family involved with cooking dinner.  But be prepared; it’s not only an easy recipe, but a popular one which requires two or three 12 inch pizzas to be enough to serve everyone. 


2 boneless, skinless chicken breasts, cooked and cubed or shredded (your choice)

1 clove garlic  chopped

2 tablespoons cooking oil or non-stick spray or use George Foreman Grill to cook chicken

Boboli Whole Wheat or Original Pizza Crust

KC Masterpiece Barbeque Sauce

Brown Beer (I like St. Arnold Brown but your choice, optional)

Red onion rings

2 cups (more or less to your taste) Mozzerella and Parmesan cheese (shredded)


Add 2 tablespoons oil to pan.  Heat thoroughly.  Add 2 thawed chicken breasts and cook thoroughly turning to each side.  Add garlic.  Or for fewer calories try grilling on the George Foreman Grill, just make sure that the outside doesn’t grill to dry ( If using the grill for chicken you still need to sauté the chopped garlic clove until tender).  Cut into cubes or shred and place to side.

Preheat oven to 425. 

Remove crust from wrapper and place on baking sheet. 

Whisk approximately ½ bottle of barbeque sauce and quarter cup of brown beer together.

Sprinkle a little garlic around the sauce.

Spread sauce around crust starting in center and spreading out.  Leave about ½ inch of crust without sauce on it.

Next add chopped or shredded cooked chicken (my family likes it chopped).  Top with approximately 6 full red onion rings, more or less to taste. 

Top with shredded cheese.

Bake in preheated oven for approximately 10-12 minutes.  Oven times vary.

Serve warm with a tossed spinach salad or vinegar bacon potato salad.
