Fancy Florentine Cookies are a traditional baker’s favorite for the Christmas holiday season, but these delightfully thin and crunchy oatmeal-filled morsels are also ideal for Valentine’s Day, bridal showers, dinner party desserts, cookie swaps, new neighbor welcome gifts and more.
Although Fancy Florentine Cookies may appear elegant and professional, these popular sweet treats are super simple to bake. Most of the ingredients in these nut-free cookies are items readily found in any baker’s pantry.
Fancy Florentine Cookies Ingredients
1 stick of butter, softened to room temperature (Do not substitute with margarine.)
2 teaspoons white flour (unsifted)
1 cup white granulated sugar
½ teaspoon salt
1 cup plain oatmeal
1 teaspoon vanilla extract
Fancy Florentine Cookies Instructions
1. Preheat oven to 375 degrees. Line two large metal cookie sheets with aluminum foil, keeping it as flat as possible. Smooth out all of the wrinkles in the aluminum foil.
2. In a large bowl, beat the softened butter with an electric mixer until it is completely smooth before adding the flour, sugar, salt, oatmeal, vanilla and egg. Mix all of these ingredients until cookie dough is well blended.
3. Cover Fancy Florentine Cookie dough, and place the entire bowl in the refrigerator for at least one hour to chill it thoroughly.
4. Scoop golf ball-sized lumps of Fancy Florentine Cookie dough onto the cookie sheets. Be sure to leave plenty of space between cookie lumps, as they flatten out quite a lot while baking.
5. Bake Fancy Florentine Cookies for 5 to 7 minutes in a preheated oven. Do not over-bake, as these thin and delicate cookies can easily become burned.
6. Slide cookie-laden foil sheets onto a flat counter or table to cool. (Place a heatproof pad, tray or hot plate under cookies to protect the counter or table, if needed.) Allow cookie sheets to cool before reusing them (with fresh aluminum foil), if needed.
7. Once Fancy Florentine Cookies have completely cooled, lift them gently off the aluminum foil with a spatula. Place the cookies on a large serving plate or in a cookie tin, lined with waxed paper. (Place additional waxed papers between layers of cookies, so they do not stick together and crumble.
Note: Fancy Florentine Cookies may break easily, leaving crumbly remnants on the bottom of the cookie tin. However, these little bits are delicious as ice cream sundae add-ons, particularly for those who have allergies or aversions to nuts.
